- Remove husks and silk from the corn. Wash and pat dry.
- Microwave for 2 minutes, then let cool for 5 minutes.
- Cut into riblets by slicing vertically down the center of each ear.
- Brush olive oil mixed with taco seasoning onto each riblet.
- Air fry at 385 degrees for 10-12 minutes.
- Combine sour cream, mayonnaise, taco seasoning, and lime juice in a bowl.
- Top cooked riblets with cotija cheese, lime juice, and sauce. Enjoy!
