  • 1 lb ground beef
  • 1 small yellow onion, finely chopped
  • 1 tablespoon fresh garlic, minced
  • 4 tablespoons tomato paste
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon red chili powder
  • 1 teaspoon red chili flakes
  • 1 cup water
  • 1 cup mixed bell peppers, diced
  • 1–2 pieces serrano peppers, finely chopped
  • 2 tablespoons oil
  • 8 medium tortillas, halved
  • 8 oz mozzarella cheese, shredded
  • Cooking spray
  • Toothpicks
  • Dried parsley, for garnish

Method
 

Instructions
  1. Heat oil in a pan over medium heat. Add onion and garlic and sauté until soft.
  2. Add ground beef and cook, breaking it apart, until it begins to brown.
  3. Season with spices and stir in tomato paste.
  4. Add water and simmer until thickened.
  5. Stir in bell peppers and serrano peppers, then remove from heat.
  6. Shape tortilla halves into cones and secure with toothpicks.
  7. Bake cones at 400°F until crisp.
  8. Fill cones with beef mixture and top with mozzarella.
  9. Bake again until cheese is melted and bubbly. Garnish and serve warm.
