  • 2 bananas Bananas Ripe but still firm ones work best, giving you sweetness and structure for slicing.
  • 1 tsp Flaky sea salt A pinch of flaky sea salt on top transforms each bite, balancing out the sweetness and adding a touch of crunch.
  • 1 cup Chocolate chips Bring that classic Reese’s effect; semisweet or milk chocolate both work well.
  • 1/4 cup Peanut butter The creamy glue that brings these bites together; look for natural or smooth types for easy spreading.
  • 1 tbsp Coconut oil Stirred into melted chocolate, it makes the coating smooth and glossy, perfect for dipping.

Instructions
  1. Slice bananas into 1-inch pieces and place them on to a clean baking sheet.
  2. Top each piece of banana with peanut butter, placing peanut butter on banana in equal amounts. This may get a little messy, so work slowly.
  3. Gently place a second banana piece on top of the peanut butter covered banana. Place in the freezer.
  4. These have a tendency to move around a bit, so I suggest checking them half way through and making sure they are all lined up.
  5. After two hours, check to make sure they are frozen.
  6. If the frozen peanut butter banana bites are ready, melt chocolate in the microwave.
  7. Remove melted chocolate from the microwave and stir in coconut oil. It will be thinner and glossy.
  8. Using a fork, quickly coat each banana bite completely with chocolate. Place coated bites back on to the baking sheet.
  9. While the chocolate is still melted, sprinkle with just a tiny bit of flaky sea salt.
  10. Place the chocolate covered bites back in the freezer one more time. Freeze for 1 hour.
